A refreshing cooler for summer days - my simple recipe for Earl Grey, lemon verbena and mint syrup is a real showcase for the fresh herbs in season at the moment. It can be added to still or sparkling water to make a refreshing iced tea, or add a dash or 2 to a summer cocktail or non-alcoholic drink. An equally good addition to a gin and tonic or a glass of lemonade for apero o' clock.
Watch this space for more seasonal recipes using our homegrown produce. I have a feeling there may be one or two for courgettes coming up!

Earl Grey, Lemon Verbena & Mint Syrup
preparation/cooking time: less than 30 minutes
recipe by Ema at De Tout Coeur Limousin
1 cup sugar
2 cups water
3/4 cup chopped fresh mint
3/4 cup chopped lemon verbena
3 Earl Grey tea bags or 6 tsps loose leaf tea
zest and juice of 1 lemon
method:
add the Earl Grey tea bags/loose tea to 2 cups of just boiled water, stir and brew for 5 minutes. Remove the tea bags/tea leaves and strain through a sieve into a saucepan.
add the sugar, chopped mint and lemon verbena and lemon zest and bring to the boil. Simmer for 10 minutes. Remove from the heat and add the lemon juice.
leave to cool completely before straining and storing in an airtight bottle in the fridge. Dilute to taste.

Hmmm, interesting - I've lots of lemon verbena but my mint is lacking at the moment. Really like the idea of this #happyandhome

DeleteLike Stephanie, I have plenty of lemon verbena, which seeds itself freely around the garden, but no mint. If you think it would work, then I'll give it a try. I made some elderflower cordial a few years ago, which turned out rather well.

DeleteVerbena is one of absolute favourite smells. Just add it to a bit of mint and I bet the syrup is delicious! Thanks for sharing Phoebe.
