Rosehip and mint lassi
A cool & refreshing blended yogurt drink recipe perfect for sunny days. The rosehip and mint add a sweetness and fresh flavour to the tangy yogurt - a delicious combination (and a great way of using the beautiful fresh mint that is in abundance in the garden). Ready in just a few minutes after a quick whizz in the blender.
We are in the middle of a heat wave here in the Limousin and it's at times like these that we are even more grateful to live near the Lac de Vassiviere, which is great for a quick cool down when the temperatures rise.
Ironically, as I write the rain has started to fall and I can here the vegetable patch (and Eric le chien) breath a sigh of relief as the water starts to cool them down. It's only a quick shower however and over as soon as it began. Time to get the blender out and make another lassi I think...
My rosehip and mint lassi is great served on its own, as a summer cooler, but goes really well alongside curries and spicy dishes too.
recipe by Ema at De Tout Coeur Limousin
preparation time: less than 10 minutes
serves 2
ingredients:
400ml plain natural yogurt
3-4 tbsp rosehip syrup (or alternatively you can use rose syrup/cordial or rosewater to taste)
handful chopped fresh mint
handful ice cubes
dash of milk (to thin if necessary)
method:
add all ingredients to a blender and whizz until well mixed. Thin with a bit of extra milk if necessary.
