A delicious, healthy, quick and easy to make recipe. Our date, coconut and sesame energy balls are perfect for a pick me up snack during the day with a cuppa, or for when you are on the go. A new addition to our retreat kitchen menu, and a sweet treat for our choir tea breaks too. 


ingredients


250g pitted dates
1 cup desiccated coconut
2/3 cup peanuts/cashews
2 tbsp sesame seeds
1 tsp ground cinnamon 
water


method


add 2/3 cup of the dessicated coconut and all the other ingredients to a food processor and blend until finely chopped and the mixture holds together well. Gradually add a little water if necessary to bring the mixture together. 

roll into balls of about 1 tbsp size then roll into the remaining 1/3 cup of desiccated coconut. 

store in an airtight container in the fridge until ready to eat. 


cooking tips

mix and match the ingredients to your own taste/dietary requirements just keep the proportions the same. For example these would be great made with dried apricots and almonds instead of the dates and peanuts, or add some more spice with ginger instead of the cinnamon.
