Courgettes are everywhere! The No Dig Garden Diaries at De Tout Coeur Limousin
After the recent heavy hailstones and stormy weather here I thought the courgettes had been killed off, however this week they have come back in abundance! After a short period of self repair they sprouted new leaves and flowers, the bees did their work, and the courgettes are back, and if possible even better than before!
So far we are working through our repertoire of courgette recipes, from roasted courgettes, to courgette cake (which was a hit with our singing guests today), raw courgette grated into salads, quickly sauteed in butter and herbs, and tonight; slow roasted courgettes and caramelised onions which I will stir into pasta when they are soft and melting, and top with a sprinkling of grated cheese. Yum! Please feel free to get in touch and share your favourite courgette recipes too, it's always interesting to hear what other people are cooking.
In other news the potimarron are also starting to sprawl across the garden. I also feared they wouldn't survive the storms but it looks like they are hardier than I thought.
The first tomato ripened, and we ceremoniously enjoyed half each with a pinch of salt. It was just delicious; perfumed and sweet. Looking forward to a few more over the coming months.
The next lot of seeds have now gone in for later summer crops too. Pak choi, which is one of my favourite vegetables, and quite difficult to find locally, and a few radish, beetroot and spinach beet. I have planted the quick growing radish in between the tomato plants, as they don't take up much room and will be ready in about a month or so.
The cabbage butterflies seem to have moved on to other pastures, and the cabbages are slowly making a recovery.
Now, off to don my long gardening gloves and get back into the courgette patch to cut a few for dinner.
