I love a day experimenting and recipe testing in my tiny retreat kitchen here at De Tout Coeur Limousin, This is the latest addition to our breakfast table; my Sunflower, Pumpkin, Almond and Date Granola is so quick and easy, and a healthy breakfast cereal option too.
Packed with oats, sunflower seeds, pumpkin seeds, flaked almonds and a few chopped dates for natural sweetness. There's a good amount of warming ginger and cinnamon spice too, and a spoonful of honey or maple syrup and oil helps the oats, seeds and nuts to crisp up. Heat the granola gently in the oven until golden brown. Your kitchen will smell amazing when you make this!
Feel free to substitute the ingredients with your own choice of nuts, seeds and dried fruits. It will work well with any combination, just keep the proportions roughly the same and you will be fine.
Enjoy your granola with milk/milk alternative of your choice, sprinkled onto yogurt or on top of your cakes and bakes. It would make a great healthy fruit crumble topping too!

1-2 tbsp honey/maple syrup

method
Preheat the oven to 150C. Mix together the oil, honey/maple syrup, ginger and cinnamon in a large bowl. Add the oats, sunflower seeds, pumpkin seeds and flaked almonds and mix well. Spread the mixture evenly on a baking tray and bake for 30-40 minutes (or until golden brown) turning the mixture every 10 minutes or so. Add the chopped dates then leave to cool completely before storing in an airtight container.
