Lightly steamed seasonal spring greens with a simple miso, brown butter and garlic dressing. Delicious served over plain rice or grains as a main dish, or as side dish with roast meat or fish. I love cooking with fresh, healthy and home grown vegetables. We are looking forward to coming up with many more recipes over the spring and summer using our locally grown produce here in the Limousin. Just waiting for a break in the rain now before I can go out into the garden and continue planting and crossing my fingers!

Miso, brown butter and garlic spring greens
ingredients
1 head spring greens thinly sliced
1 tbsp butter
2 tbsp brown soybean miso
1 garlic clove peeled
freshly ground black pepper
method
Add the sliced greens to a pan with a splash of water, cover and steam for a few minutes until softened.
Heat the butter in a separate pan, with the garlic clove, until the butter has a nutty aroma and is a golden brown/caramel colour. Take off the heat, remove the garlic clove and stir in the miso paste. Pour the miso and brown butter dressing over the steamed greens, stir, season with black pepper and serve.
