Spiced Nut and Seed Dukkah Mix 



Dukkah is a favourite in our retreat kitchen here at De Tout Coeur Limousin. Simple to make, and a great way of adding spice and crunch to your dishes. 

The word dukkah comes from the Arabic verb 'to pound' and is an Egyptian nut, seed and spice mixture. 

There are many dukkah recipes available, so feel free to mix and match with your favourite nuts, seeds, herbs and spices. Although traditional dukkah recipes will usually contain hazelnuts, sesame seeds, cumin and coriander seeds. 

Sprinkle your dukkah on soups, stews, salads, houmous, roast vegetables and meat; in fact on any dish you want to add a fragrant crunchy, protein packed seasoning. It's also delicious served as a dip with crusty bread or vegetable crudités and olive oil.

Recipe by Ema at De Tout Coeur Limousin

 ingredients

 50g pumpkin seeds
50g sunflower seeds
25g cashews
25g almonds
25g walnuts
25g hazelnuts
3 tbsp coriander seeds
3 tbsp fennel seeds
2 tbsp cumin seeds
1 tbsp chilli flakes
1 tbsp dried garlic flakes
1 tbsp nigella seeds
70g sesame seeds
1 tbsp black peppercorns
1 tsp coarse sea salt

 method

 add all the ingredients, apart from the sesame and nigella seeds, chilli and garlic flakes to a dry frying pan and warm over a low heat until fragrant and just starting to pop. Add the remaining ingredients for the last few minutes, stirring well to ensure the nuts and seeds don't burn. 

 Leave the mixture to cool before using a spice grinder/food processor/or pestle and mortar to blend/pound until you have a crumbly crunchy texture. 

 Store in an airtight container in the fridge.
