My Japanese style 7 spice mix - inspired by the 7 spice blend shichimi togarashi (roughly translated as 7 spices/chillies). An interesting and unique blend of flavours; fresh, spicy, citrussy, fragrant and salty. It is delicious as a seasoning sprinkled onto noodle and rice dishes, soups and grilled and roasted meat and fish dishes too.
ingredients:
4 clementines
1 roasted nori sheet (about 3g)
2 tbs Szechuan peppercorns
2 tbs dried chilli flakes (or 3/4 dried chillies)
1 tbs poppy seed
1 tbs sesame seed
1 tbs garlic granules
method:
preheat the oven to 100C and line a baking sheet with greaseproof paper/baking parchment.
zest the clementines and spread evenly on the baking sheet. Roast for 12-15 minutes - until the zest is dried out.
roast the Szechuan peppers in a dry frying pan for a few minutes/until they become fragrant.
toast the sesame seeds in a dry pan until lightly golden.
add all the ingredients to a blender and whizz up for a minute or 2 until you have fine granules.
store in an airtight container. Bon appetit!
cooks hints and tips:
keep a very close eye when roasting the peppercorns, clementine zest and sesame seeds - one second they are perfect - the next burnt!
it makes a great seasonal food gift too.
a great way of using up clementines and odds and ends of seeds and spices in your cupboard.
