In the retreat kitchen at De Tout Coeur Limousin - Aubergine, coconut and peanut curry 

A delicious winter warming recipe for my aubergine coconut and peanut curry in the retreat kitchen today. A rich coconut, peanut and tomato sauce, fragrant with (so) much garlic, and simply spiced with cumin, turmeric and fresh green chilli. This is food to make you smile, whatever the weather. 
This recipe makes enough for 4-6 people, but it's easy to double up and then have enough to freeze for another day. Happy cooking. 

Aubergine, coconut and peanut curry 

ingredients: 


3 large aubergines 
150g desiccated coconut 
75g peanuts (roughly chopped, or give a quick whizz in a food processor) 
1 head of garlic (separate, peel and crush the cloves)
1 large onion chopped 
1 green finger chilli finely chopped
1 tin chopped tomatoes
1 tsp ground cumin
1 tsp turmeric
1 tsp sugar
1 tbsp oil 
salt and pepper to taste
water
extra desiccated coconut, chilli and chopped fresh coriander/mint to garnish


method: 


wash then prick the aubergines several times all over with a sharp knife. Microwave, covered in a suitable container for 10-15 minutes or until soft. Remove and allow to cool slightly before roughly chopping into large bite size pieces. Leave to one side. 
heat the oil in a large, deep frying pan then add the onion and fry until softened and caramelised. Add the crushed garlic followed by the chilli, cumin, and turmeric and fry for a few minutes until fragrant. 
add the desiccated coconut and peanuts, followed by the cooked and chopped aubergine. Mix everything together well then add the tinned tomatoes and just enough water to cover and simmer on a low heat for about 30 minutes, or until the sauce has thickened and reduced. 
check the seasoning, garnish with the chopped coriander and mint then serve the aubergine, coconut and peanut curry with rice or flat breads.  Bon appetit! 

Cooking tips: 

You can also steam the aubergine on the hob in a steamer/saucepan if you do not have a microwave.
