The hot sauce making continues here in the kitchen at De Tout Coeur Limousin. With a bagful of green serrano chillies to use up I was looking for the perfect quick chilli sauce recipe. I love garlic and ginger in my chilli sauces - so added these too. 

We are big fans of the traditional red sriracha chilli sauce, which is always a kitchen cupboard staple (we get withdrawal symptoms if we ever run out). Luckily we have found this recipe which is a very good alternative, and another necessary chilli sauce to have in the cupboard.

This green sriracha style chilli sauce is so quick and easy to make - just blend all the ingredients together, then simmer until reduced and thickened, and pour into sterilized bottles or jars.

My homemade green sriracha chilli sauce is delicious used as an ingredient stirred into chillies, curries and stir fries or as a condiment in burgers and sandwiches. Just in time for BBQ season and the inaugural lighting of the fire pit. 


preparation/cooking time guide: about 30 minutes 
recipe adapted from: fiery green sriracha


ingredients


1 1/2 pounds green chilli peppers de-stemmed and roughly chopped (use any combination of hot green chillies you like) 
6 garlic cloves peeled
2 oz ginger root peeled
1/2 cup white vinegar
1/4 cup sugar
1 tablespoon salt

method

using a food blender or processor to blend all the ingredients together until they are a smooth paste. 

pour the blended ingredients into a saucepan, bring to the boil then reduce the heat to a low/medium. Simmer for about 10 minutes, until the chilli sauce is thickened and reduced in volume. 

take the cooked green chilli sauce off the heat and pour carefully into clean, sterilized bottles or jars with a funnel. Seal with an air tight lid and leave to cool. The green sriracha chilli sauce is ready to use immediately. Once opened store in the fridge.
